Sweet Potato Casserole
Description
The sweet potato casserole is a classic holiday side dish in America. This dish can trace its origins to the beginning of the 20th century, as part of a marketing campaign to increase sweet potato consumption. In the 1920’s, the Louisiana Sweet Potato Commission partnered with Angelus Marshmallows to create this classic combination that is a part of almost every thanksgiving dinner in America.
Ingredients
5-6 medium sweet potatoes, peeled and cubed
1 cup canned crushed pineapple
¼ cup brown sugar
4 tbsp unsalted butter, room-temp and cut into small cubes
2 cups marshmallows
Preparation
Boil the sweet potatoes for 15-20 minutes, until tender. Drain and mash in a bowl with the pineapple, butter and brown sugar. Spread the mixture into an 8”x12” baking dish. Bake at 350 degrees for ½ hour. Remove from oven, then top with marshmallows and bake for 10 more minutes. Serve warm.
Notes
A popular variation uses 2 large cans of cooked sweet potatoes in place of the fresh ones.
